Crispy Air Fryer Roast Potatoes by Poppycooks

Golden, crispy-skinned potatoes with a tender, fluffy center, prepared entirely in the air fryer.

Ingredients
- 5 large maris piper or yukon gold potatoes, peeled and quartered
- 3 tbsp vegetable oil
- 1 tsp sea salt (plus extra for finishing)
Instructions
- Peel the potatoes and cut them into even-sized quarters.
- Place the potato quarters in the air fryer basket, drizzle with the vegetable oil, and season with 1 teaspoon of salt, tossing well to ensure they are fully coated.
- Cook at 160°C (320°F) for 30 minutes, tossing the potatoes aggressively every 10 minutes to help them soften and begin to break apart slightly.
- Increase the air fryer temperature to 200°C (400°F). Add a final light drizzle of oil and a pinch of salt, then cook for another 10 minutes.
- Check for golden, crispy edges; if some potatoes need more color, cook for an additional 5-10 minutes until uniformly golden and crispy.
- Remove from the air fryer and finish with a sprinkle of flaky salt before serving.
