Best Creamy Mashed Potato by Poppycooks

unbeatable, creamy mashed potatoes by boiling, drying, and pressing them through a sieve.

Ingredients

  • 4 maris piper or russet potatoes
  • 75 g salted butter
  • 50 ml milk or cream
  • 2 tbsp salt
  • 1 tbsp melted butter (optional)
  • 1 tsp sea salt (for cream)
  • 0.5 tsp cracked black pepper

Instructions

  1. Chop potatoes and place in cold water.
  2. Heavily salt the water, like the sea, and bring to a boil
  3. Simmer gently until potatoes are very tender and fall off a knife, about 15-20 minutes.
  4. Drain potatoes and return to the hot pan.
  5. Cover with a tea towel and let steam dry for 10 minutes.
  6. Gently heat cream with sea salt and black pepper in a small pan.
  7. Pass dried potatoes through a sieve into a bowl, adding cubes of butter as you go.
  8. Use a spatula to push potatoes through the sieve.
  9. Gradually add warm cream mixture to the mashed potatoes, mixing gently until desired consistency is reached.
  10. Serve immediately, optionally garnished with chives.
