unbeatable, creamy mashed potatoes by boiling, drying, and pressing them through a sieve.

Ingredients
- 4 maris piper or russet potatoes
- 75 g salted butter
- 50 ml milk or cream
- 2 tbsp salt
- 1 tbsp melted butter (optional)
- 1 tsp sea salt (for cream)
- 0.5 tsp cracked black pepper
Instructions
- Chop potatoes and place in cold water.
- Heavily salt the water, like the sea, and bring to a boil
- Simmer gently until potatoes are very tender and fall off a knife, about 15-20 minutes.
- Drain potatoes and return to the hot pan.
- Cover with a tea towel and let steam dry for 10 minutes.
- Gently heat cream with sea salt and black pepper in a small pan.
- Pass dried potatoes through a sieve into a bowl, adding cubes of butter as you go.
- Use a spatula to push potatoes through the sieve.
- Gradually add warm cream mixture to the mashed potatoes, mixing gently until desired consistency is reached.
- Serve immediately, optionally garnished with chives.
