Creamy cheesecake baked on a buttery crust of crushed strawberry Pop-Tarts and stroopwafel crumbs.

Ingredients

  • 3 packages strawberry pop-tarts, crumbed (for crust)
  • 1 cup stroopwafel crumbs (for crust)
  • 1 stick (113g) unsalted butter, melted (for crust)
  • 3 blocks (24 oz) cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup half-and-half
  • 3 large eggs
  • 1 tbsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Combine crumbed Pop-Tarts, stroopwafel crumbs, and melted butter in a bowl, then press firmly into the bottom of a 9-inch round springform pan.
  2. Bake the crust for 8-10 minutes until set, then remove and let cool for at least 15 minutes.
  3. Reduce oven temperature to 325°F (165°C).
  4. Beat cream cheese and sugar in a large bowl until smooth, then mix in eggs, half-and-half, and vanilla extract until combined.
  5. Pour the filling over the cooled crust and bake for 75 minutes.
  6. Turn off the oven, prop the door open slightly, and let the cheesecake cool inside for 45 minutes.
  7. Remove from the oven, cool at room temperature for 1 hour, then refrigerate until completely chilled before serving.
