Strawberry Pop-Tart Cheesecake by Platesbykody

Creamy cheesecake baked on a buttery crust of crushed strawberry Pop-Tarts and stroopwafel crumbs.

Ingredients
- 3 packages strawberry pop-tarts, crumbed (for crust)
- 1 cup stroopwafel crumbs (for crust)
- 1 stick (113g) unsalted butter, melted (for crust)
- 3 blocks (24 oz) cream cheese, softened
- 1 cup granulated sugar
- 1 cup half-and-half
- 3 large eggs
- 1 tbsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Combine crumbed Pop-Tarts, stroopwafel crumbs, and melted butter in a bowl, then press firmly into the bottom of a 9-inch round springform pan.
- Bake the crust for 8-10 minutes until set, then remove and let cool for at least 15 minutes.
- Reduce oven temperature to 325°F (165°C).
- Beat cream cheese and sugar in a large bowl until smooth, then mix in eggs, half-and-half, and vanilla extract until combined.
- Pour the filling over the cooled crust and bake for 75 minutes.
- Turn off the oven, prop the door open slightly, and let the cheesecake cool inside for 45 minutes.
- Remove from the oven, cool at room temperature for 1 hour, then refrigerate until completely chilled before serving.
