Tender golden-seared chicken breasts finished in a vibrant, velvety lemon butter sauce with fresh herbs.

Ingredients
- 4 boneless, skinless chicken breasts (about 150g each), pounded to even thickness
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbsp all-purpose flour
- 2 tbsp olive oil
- 4 tbsp unsalted butter, cubed and chilled
- 3 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 2 tbsp fresh parsley, finely chopped
Instructions
- Season the chicken breasts evenly on both sides with salt and pepper, then lightly dredge in flour, shaking off any excess.
- Heat olive oil in a large skillet over medium-high heat until shimmering, then add the chicken and sear for 5-6 minutes per side until golden brown and cooked through (internal temp of 165°F).
- Remove chicken from the pan and set aside on a warm plate.
- Reduce heat to medium, add the garlic to the pan, and sauté for 30-60 seconds until fragrant.
- Pour in the lemon juice, scraping up any browned bits from the bottom of the pan, and simmer for 1 minute.
- Whisk in the cold butter cubes one at a time until the sauce is emulsified and glossy, about 2 minutes.
- Return the chicken to the pan to coat in the sauce for 1 minute, garnish with fresh parsley, and serve immediately.
