Tender golden-seared chicken breasts finished in a vibrant, velvety lemon butter sauce with fresh herbs.

Ingredients

  • 4 boneless, skinless chicken breasts (about 150g each), pounded to even thickness
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter, cubed and chilled
  • 3 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 2 tbsp fresh parsley, finely chopped

Instructions

  1. Season the chicken breasts evenly on both sides with salt and pepper, then lightly dredge in flour, shaking off any excess.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering, then add the chicken and sear for 5-6 minutes per side until golden brown and cooked through (internal temp of 165°F).
  3. Remove chicken from the pan and set aside on a warm plate.
  4. Reduce heat to medium, add the garlic to the pan, and sauté for 30-60 seconds until fragrant.
  5. Pour in the lemon juice, scraping up any browned bits from the bottom of the pan, and simmer for 1 minute.
  6. Whisk in the cold butter cubes one at a time until the sauce is emulsified and glossy, about 2 minutes.
  7. Return the chicken to the pan to coat in the sauce for 1 minute, garnish with fresh parsley, and serve immediately.
