Ingredients

  • 300g chicken breast, diced
  • 2 tbsp curry powder
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 200g tomato passata
  • 120ml water
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 200g plain flour
  • 1 tsp instant yeast
  • 1/2 tsp sugar
  • 120ml warm water
  • 2 tbsp plain yogurt
  • 1 tbsp melted butter
  • 100g grated cheddar cheese

Instructions

  1. Mix the flour, yeast, sugar, salt, warm water, and yogurt, then knead for 5-7 minutes until smooth and elastic.
  2. Cover the dough and let it rise for 1 hour, or until doubled in size.
  3. Sauté the onion and garlic in olive oil over medium heat for 3-4 minutes until softened and fragrant.
  4. Add the chicken and curry powder, then cook for 5-6 minutes until lightly browned on the outside.
  5. Stir in the tomato passata, water, salt, and pepper, then simmer for 10-12 minutes until the sauce thickens and the chicken is cooked through.
  6. Divide the dough into 4 pieces, roll each into a naan shape, and sprinkle cheddar over the top.
  7. Cook the naans in a hot dry skillet over medium-high heat for 2-3 minutes per side until puffed and spotted with golden brown.
  8. Brush the cooked naans with melted butter, then top with the chicken curry and serve warm.
