French Onion Grilled Cheese by Peacelovedough

Caramelized onion jam and a trio of melted cheeses toasted between golden, buttery bread slices.

Ingredients

  • 2 yellow onions, thinly sliced
  • 5 tbsp butter (for clarifying)
  • 1/2 tsp salt
  • 1 tbsp garlic, minced
  • 1 tsp honey
  • 2 tbsp white wine (or beef stock)
  • 2 slices sourdough or hearty bread
  • 2 oz white american cheese, sliced
  • 2 oz gruyere cheese, shredded
  • 2 oz sharp white cheddar, shredded
  • 1 tbsp butter (for grilling)

Instructions

  1. Clarify the butter by melting 5 tbsp in a pan over medium heat; skim the white foam off the surface with a spoon and discard.
  2. Add sliced onions to the clarified butter, season with salt, and cook over high heat, stirring every 5 minutes for 10-15 minutes until deeply caramelized.
  3. Stir in the garlic, honey, and wine (or stock) and cook for 2-3 minutes until the mixture reaches a jam-like consistency; remove from heat and set aside.
  4. Lightly butter the inside of the bread slices and toast briefly in a cast iron skillet over medium heat.
  5. Assemble the sandwich by layering half the cheese, the onion jam, and the remaining cheese, then close the sandwich.
  6. Butter the outside of the bread and grill in the skillet over medium heat for 3-4 minutes per side until the bread is golden brown and the cheese is fully melted.
