French Onion Grilled Cheese by Peacelovedough
Caramelized onion jam and a trio of melted cheeses toasted between golden, buttery bread slices.

Ingredients
- 2 yellow onions, thinly sliced
- 5 tbsp butter (for clarifying)
- 1/2 tsp salt
- 1 tbsp garlic, minced
- 1 tsp honey
- 2 tbsp white wine (or beef stock)
- 2 slices sourdough or hearty bread
- 2 oz white american cheese, sliced
- 2 oz gruyere cheese, shredded
- 2 oz sharp white cheddar, shredded
- 1 tbsp butter (for grilling)
Instructions
- Clarify the butter by melting 5 tbsp in a pan over medium heat; skim the white foam off the surface with a spoon and discard.
- Add sliced onions to the clarified butter, season with salt, and cook over high heat, stirring every 5 minutes for 10-15 minutes until deeply caramelized.
- Stir in the garlic, honey, and wine (or stock) and cook for 2-3 minutes until the mixture reaches a jam-like consistency; remove from heat and set aside.
- Lightly butter the inside of the bread slices and toast briefly in a cast iron skillet over medium heat.
- Assemble the sandwich by layering half the cheese, the onion jam, and the remaining cheese, then close the sandwich.
- Butter the outside of the bread and grill in the skillet over medium heat for 3-4 minutes per side until the bread is golden brown and the cheese is fully melted.
