Easy Homemade Stuffed Pita Pockets by Peacelovedough

These simple, yeast-free pita pockets are filled with savory ground beef and melted mozzarella cheese.

Ingredients
- 1 lb ground beef
- 1 small onion, chopped
- 2 tsp garlic, minced
- 4 tbsp marinara sauce
- 1.5 cup all-purpose flour
- 2.25 tsp baking powder
- 0.3 tsp salt
- 1 cup greek yogurt
- 1 cup mozzarella cheese, shredded
- 2 tbsp butter, melted
- 1 tsp fresh parsley, chopped
- 2 tbsp olive oil
Instructions
- Sauté onion in 1 tbsp olive oil over medium heat until softened. Add ground beef, season with salt, pepper, and Italian seasoning, and cook until browned.
- Stir in minced garlic and marinara sauce. Remove from heat and place in the refrigerator to cool completely.
- In a large bowl, whisk together flour, baking powder, and salt. Add Greek yogurt and mix until a dough ball forms.
- Turn dough onto a floured surface and knead for 2 minutes until smooth. Cover and let rest for 20 minutes.
- Divide dough into 6 equal pieces and roll into balls. Flatten each ball into a circle.
- Place a heaping tablespoon of the cooled meat mixture and a sprinkle of mozzarella in the center of each dough circle.
- Fold the edges of the dough over the filling and pinch to seal, then gently press flat
- Heat remaining olive oil in a pan over medium heat. Cook pockets for 3-4 minutes per side until golden brown and cooked through.
- Mix melted butter with minced garlic and parsley. Brush over the hot pockets before serving
