Easy Homemade Stuffed Pita Pockets by Peacelovedough

These simple, yeast-free pita pockets are filled with savory ground beef and melted mozzarella cheese.

Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 tsp garlic, minced
  • 4 tbsp marinara sauce
  • 1.5 cup all-purpose flour
  • 2.25 tsp baking powder
  • 0.3 tsp salt
  • 1 cup greek yogurt
  • 1 cup mozzarella cheese, shredded
  • 2 tbsp butter, melted
  • 1 tsp fresh parsley, chopped
  • 2 tbsp olive oil

Instructions

  1. Sauté onion in 1 tbsp olive oil over medium heat until softened. Add ground beef, season with salt, pepper, and Italian seasoning, and cook until browned.
  2. Stir in minced garlic and marinara sauce. Remove from heat and place in the refrigerator to cool completely.
  3. In a large bowl, whisk together flour, baking powder, and salt. Add Greek yogurt and mix until a dough ball forms.
  4. Turn dough onto a floured surface and knead for 2 minutes until smooth. Cover and let rest for 20 minutes.
  5. Divide dough into 6 equal pieces and roll into balls. Flatten each ball into a circle.
  6. Place a heaping tablespoon of the cooled meat mixture and a sprinkle of mozzarella in the center of each dough circle.
  7. Fold the edges of the dough over the filling and pinch to seal, then gently press flat
  8. Heat remaining olive oil in a pan over medium heat. Cook pockets for 3-4 minutes per side until golden brown and cooked through.
  9. Mix melted butter with minced garlic and parsley. Brush over the hot pockets before serving
