Classic Savory Meatloaf by Peacelovedough
Tender ground beef meatloaf with a savory cracker-crumb base and a tangy, caramelized ketchup glaze.

Ingredients
- 900g (2 lbs) ground beef
- 1 cup butter crackers, crushed
- 1 medium onion, finely diced
- 3 cloves garlic, minced
- 60ml (1/4 cup) sour cream
- 1 large egg
- 30ml (2 tbsp) worcestershire sauce
- 30ml (2 tbsp) ketchup (for the meat mixture)
- 7g (1/2 tbsp) dijon mustard
- 15g (2 tbsp) fresh parsley, chopped
- 5g (1 tsp) paprika
- 5g (1 tsp) onion powder
- 5g (1 tsp) garlic powder
- 10g (2 tsp) salt and pepper, to taste
- 60ml (1/4 cup) ketchup (for the glaze)
- 15ml (1 tbsp) worcestershire sauce (for the glaze)
Instructions
- Sauté the diced onion and minced garlic in a small amount of butter over medium heat until soft and translucent, about 5-7 minutes; set aside to cool.
- Preheat your oven to 175°C (350°F).
- In a large bowl, combine the ground beef, crushed butter crackers, cooled onion-garlic mixture, sour cream, egg, worcestershire sauce, 2 tablespoons of ketchup, dijon mustard, parsley, and dry seasonings.
- Mix everything by hand until just combined, being careful not to overwork the meat.
- Place 2-3 slices of bread on the bottom of a casserole dish to absorb excess fat.
- Form the meat mixture into a loaf shape and place it on top of the bread slices in the dish.
- Bake for 60 minutes, then remove from the oven and spread the glaze mixture (ketchup and worcestershire) over the top.
- Return to the oven and bake for an additional 30 minutes, or until the internal temperature reaches 71°C (160°F).
