Homemade Carrot Ketchup by Papaonmangequoi

Vibrant, savory carrot-based ketchup made with peeled tomatoes for a simple, sweet-tangy flavor profile.

Ingredients

  • 500g carrots, peeled and sliced
  • 500g canned peeled tomatoes
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 50ml apple cider vinegar
  • 30g brown sugar
  • 1 tsp salt
  • 1/2 tsp smoked paprika

Instructions

  1. Sauté the diced onion and garlic in a pan over medium heat for 5 minutes until softened.
  2. Add the sliced carrots, canned tomatoes, sugar, salt, and paprika to the pan until ready to serve.
  3. Simmer the mixture on low heat for 20-25 minutes, or until the carrots are fork-tender.
  4. Stir in the apple cider vinegar and cook for an additional 2 minutes.
  5. Transfer the mixture to a blender and process until completely smooth.
  6. Allow the ketchup to cool to room temperature before transferring to a jar for storage until ready to serve.
