Homemade Carrot Ketchup by Papaonmangequoi
Vibrant, savory carrot-based ketchup made with peeled tomatoes for a simple, sweet-tangy flavor profile.

Ingredients
- 500g carrots, peeled and sliced
- 500g canned peeled tomatoes
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 50ml apple cider vinegar
- 30g brown sugar
- 1 tsp salt
- 1/2 tsp smoked paprika
Instructions
- Sauté the diced onion and garlic in a pan over medium heat for 5 minutes until softened.
- Add the sliced carrots, canned tomatoes, sugar, salt, and paprika to the pan until ready to serve.
- Simmer the mixture on low heat for 20-25 minutes, or until the carrots are fork-tender.
- Stir in the apple cider vinegar and cook for an additional 2 minutes.
- Transfer the mixture to a blender and process until completely smooth.
- Allow the ketchup to cool to room temperature before transferring to a jar for storage until ready to serve.
