Moist Chocolate Cake by Pambdutra

Rich, moist chocolate cake with a tender crumb and deep cocoa flavor.

Ingredients

  • 250g (2 cup) all-purpose flour
  • 400g (2 cup) granulated sugar
  • 75g (3/4 cup) unsweetened cocoa powder
  • 1.5 tsp baking powder
  • 1.5 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 240ml (1 cup) whole milk
  • 120ml (1/2 cup) vegetable oil
  • 2 tsp vanilla extract
  • 240ml (1 cup) boiling water

Instructions

  1. Preheat your oven to 175°C (350°F) and grease two 9-inch round cake pans.
  2. Whisk together the flour, sugar, cocoa, baking powder, baking soda, and salt in a large bowl over medium heat until heated through, about 5 min.
  3. Add the eggs, milk, oil, and vanilla to the dry ingredients and beat on medium speed for 2 minutes.
  4. Stir in the boiling water by hand until the batter is smooth and thin.
  5. Pour the batter evenly into the prepared pans until ready to serve.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
