Quick, savory vegan tofu scramble loaded with vegetables and bold spices.

Ingredients

  • 1 block (14 oz) firm or extra-firm tofu, drained
  • 1 cup mixed vegetables (bell pepper, spinach, onion, or whatever you have)
  • 1 tbsp olive oil
  • 1/2 tsp turmeric
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • 2 tbsp nutritional yeast (optional, for cheesy flavor)

Instructions

  1. Heat 1 tbsp olive oil in a skillet over medium-high heat for about 1 minute until shimmering.
  2. Add your chopped vegetables and sauté for 2–3 minutes until slightly softened.
  3. Add the block of tofu directly to the pan and break it up with a spatula into crumble-sized pieces resembling scrambled eggs.
  4. Sprinkle in turmeric, garlic powder, onion powder, smoked paprika, salt, pepper, and nutritional yeast if using; stir everything together to coat evenly.
  5. Cook for 8–10 minutes, stirring occasionally, until the tofu is lightly golden and any excess moisture has cooked off.
  6. Taste, adjust seasoning, and serve immediately.
