Tofu Scramble with Veggies by Pachiethepirate
Quick, savory vegan tofu scramble loaded with vegetables and bold spices.

Ingredients
- 1 block (14 oz) firm or extra-firm tofu, drained
- 1 cup mixed vegetables (bell pepper, spinach, onion, or whatever you have)
- 1 tbsp olive oil
- 1/2 tsp turmeric
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp smoked paprika
- Salt and black pepper to taste
- 2 tbsp nutritional yeast (optional, for cheesy flavor)
Instructions
- Heat 1 tbsp olive oil in a skillet over medium-high heat for about 1 minute until shimmering.
- Add your chopped vegetables and sauté for 2–3 minutes until slightly softened.
- Add the block of tofu directly to the pan and break it up with a spatula into crumble-sized pieces resembling scrambled eggs.
- Sprinkle in turmeric, garlic powder, onion powder, smoked paprika, salt, pepper, and nutritional yeast if using; stir everything together to coat evenly.
- Cook for 8–10 minutes, stirring occasionally, until the tofu is lightly golden and any excess moisture has cooked off.
- Taste, adjust seasoning, and serve immediately.
