High-Protein Chicken Chebureki by Osmancho

Tender oven-baked chicken pockets offering a high-protein, low-calorie alternative to traditional deep-fried chebureki pastries.

Ingredients

  • 1 kg chicken breast, finely minced
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 medium onion, finely grated
  • 2 tbsp plain yogurt (for moisture)
  • 12 sheets lavash or thin tortilla wraps
  • 1 tbsp olive oil (for brushing)

Instructions

  1. Combine the minced chicken breast, grated onion, yogurt, salt, pepper, and paprika in a bowl, mixing until well incorporated.
  2. Lay out the lavash sheets and cut them into 12 even circles until ready to serve.
  3. Place a generous spoonful of the chicken mixture onto one half of each lavash circle until ready to serve.
  4. Fold the other half over the filling and press the edges firmly with a fork to seal the chebureki over medium heat until heated through, about 5 min.
  5. Brush the tops of the chebureki lightly with olive oil for crisping until ready to serve.
  6. Bake in a preheated oven at 200°C (400°F) for 20-25 minutes, or until the chicken is cooked through and the edges are golden brown.
