Pork and Pepper Stir Fry by Omnivores Cookbook
Tender slices of pork seared with crisp bell peppers and onions in a savory stir-fry sauce.

Ingredients
- 350g (12 oz) pork loin or shoulder, thinly sliced
- 2 bell peppers (one red, one green), cut into bite-sized pieces
- 1 medium yellow onion, cut into wedges
- 2 cloves garlic, minced
- 1 tsp fresh ginger, minced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp cornstarch
- 1 tsp sugar
- 2 tbsp vegetable oil
- 2 tbsp water
Instructions
- Whisk soy sauce, oyster sauce, sugar, cornstarch, and water in a small bowl to create the sauce
- Heat 1 tablespoon of oil in a wok or large skillet over high heat until shimmering.
- Add pork slices and sear for 3-4 minutes until lightly browned and cooked through; remove from pan and set aside.
- Add remaining tablespoon of oil to the same pan, then add onions and bell peppers.
- Stir-fry vegetables for 3-4 minutes until crisp-tender.
- Add minced garlic and ginger, cooking for 30 seconds until fragrant.
- Return the cooked pork to the pan and pour the sauce over the mixture.
- Toss everything together for 1-2 minutes until the sauce thickens and coats the ingredients evenly.
