Pork and Pepper Stir Fry by Omnivores Cookbook

Tender slices of pork seared with crisp bell peppers and onions in a savory stir-fry sauce.

Ingredients

  • 350g (12 oz) pork loin or shoulder, thinly sliced
  • 2 bell peppers (one red, one green), cut into bite-sized pieces
  • 1 medium yellow onion, cut into wedges
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp cornstarch
  • 1 tsp sugar
  • 2 tbsp vegetable oil
  • 2 tbsp water

Instructions

  1. Whisk soy sauce, oyster sauce, sugar, cornstarch, and water in a small bowl to create the sauce
  2. Heat 1 tablespoon of oil in a wok or large skillet over high heat until shimmering.
  3. Add pork slices and sear for 3-4 minutes until lightly browned and cooked through; remove from pan and set aside.
  4. Add remaining tablespoon of oil to the same pan, then add onions and bell peppers.
  5. Stir-fry vegetables for 3-4 minutes until crisp-tender.
  6. Add minced garlic and ginger, cooking for 30 seconds until fragrant.
  7. Return the cooked pork to the pan and pour the sauce over the mixture.
  8. Toss everything together for 1-2 minutes until the sauce thickens and coats the ingredients evenly.
