Coconut-Lime Chicken Bowls by Olweneats

Tender chicken simmered in a fragrant coconut lime sauce, served over fluffy jasmine rice.

Ingredients

  • 0.75 cup jasmine rice
  • 2 tbsp rice vinegar
  • 300g (10 oz) chicken breast, diced
  • 0.5 cup coconut milk
  • 1 tbsp lime juice
  • 1 tsp lime zest
  • 1 tbsp vegetable oil
  • 0.5 tsp salt

Instructions

  1. Rinse rice under cold water, then cook according to package instructions for about 15-18 minutes until fluffy.
  2. Heat oil in a large skillet over medium-high heat and add diced chicken, cooking for 5-6 minutes until browned and cooked through.
  3. Pour in the coconut milk, lime juice, and rice vinegar, stirring to combine
  4. Simmer the sauce for 3-4 minutes until slightly thickened and coating the chicken.
  5. Remove from heat, stir in lime zest, and serve the chicken over the prepared jasmine rice
