Coconut-Lime Chicken Bowls by Olweneats

Tender chicken simmered in a fragrant coconut lime sauce, served over fluffy jasmine rice.

Ingredients
- 0.75 cup jasmine rice
- 2 tbsp rice vinegar
- 300g (10 oz) chicken breast, diced
- 0.5 cup coconut milk
- 1 tbsp lime juice
- 1 tsp lime zest
- 1 tbsp vegetable oil
- 0.5 tsp salt
Instructions
- Rinse rice under cold water, then cook according to package instructions for about 15-18 minutes until fluffy.
- Heat oil in a large skillet over medium-high heat and add diced chicken, cooking for 5-6 minutes until browned and cooked through.
- Pour in the coconut milk, lime juice, and rice vinegar, stirring to combine
- Simmer the sauce for 3-4 minutes until slightly thickened and coating the chicken.
- Remove from heat, stir in lime zest, and serve the chicken over the prepared jasmine rice
