Moist, tender yellow cake squares studded with sweet, caramelized pineapple chunks and a golden crumb.

Ingredients

  • 450g (1 lb) fresh pineapple, peeled and finely diced
  • 250g (2 cup) all-purpose flour
  • 200g (1 cup) granulated sugar
  • 225g (1 cup) unsalted butter, softened
  • 3 large eggs, room temperature
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 60ml (1/4 cup) whole milk

Instructions

  1. Preheat your oven to 175°C (350°F) and grease a 9x9 inch square baking pan.
  2. Cream the softened butter and sugar in a large bowl with an electric mixer until pale and fluffy, about 3-5 minutes.
  3. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. Whisk together the flour, baking powder, and salt in a separate bowl
  5. Gradually incorporate the dry ingredients into the butter mixture, alternating with the milk, until just combined.
  6. Fold in the diced pineapple gently with a spatula until evenly distributed.
  7. Pour the batter into the prepared pan and smooth the top with a spatula.
  8. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  9. Cool in the pan for 15 minutes before slicing into squares.
