Aesthetic Butter Cookies by Okaysimrann

Buttery, crisp-edged shortbread cookies with a delicate crumb and subtle notes of pure vanilla bean.

Ingredients

  • 225g (1 cup) unsalted butter, softened
  • 150g (3/4 cup) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 300g (2 1/2 cup) all-purpose flour
  • 1/4 tsp salt

Instructions

  1. Cream the softened butter and sugar together in a large bowl with an electric mixer on medium speed for 3-4 minutes until pale and fluffy.
  2. Add the egg and vanilla extract, beating on medium speed for 1 minute until fully incorporated.
  3. Sift in the flour and salt, folding gently with a spatula until just combined into a soft dough.
  4. Transfer the dough to a piping bag fitted with a star tip and pipe desired shapes onto a parchment-lined baking sheet until ready to serve.
  5. Chill the piped cookies in the refrigerator for 15 minutes to help them hold their shape during baking.
  6. Bake in a preheated oven at 180°C (350°F) for 10-12 minutes, or until the edges are lightly golden brown.
  7. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
