Shabu-Inspired Beef Rice Bowls by Nourishmentnutrition

Thinly sliced, tender beef simmered in a savory soy-mirin glaze served over fluffy steamed rice.

Ingredients

  • 2 cup cooked short-grain white rice
  • 250g (9 oz) thinly sliced beef (shabu-shabu or ribeye)
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sesame oil
  • 1 tsp grated ginger
  • 2 stalks green onions, thinly sliced
  • 1 tbsp toasted sesame seeds

Instructions

  1. Whisk together the soy sauce, mirin, sesame oil, and grated ginger in a small bowl to create the sauce over medium heat until heated through, about 5 min.
  2. Heat a large skillet over medium-high heat until hot.
  3. Add the thinly sliced beef to the skillet and sear for 2-3 minutes, stirring constantly until just browned.
  4. Pour the sauce mixture over the beef and simmer for 1-2 minutes until the sauce reduces slightly and coats the meat.
  5. Divide the cooked rice into two bowls until ready to serve.
  6. Top the rice with the glazed beef and garnish with sliced green onions and sesame seeds before serving until ready to serve.
