Chocolate Brioche by Nourhan Hegazy
Enriched golden brioche dough marbled with decadent chocolate, featuring a soft, tender crumb and buttery finish.

Ingredients
- 1 kg all-purpose flour
- 200 g sugar
- 3 tbsp milk powder
- 1/2 tsp salt
- 1 tsp baking powder
- 1 tbsp active dry yeast
- 240 ml warm milk
- 150 g unsalted butter, softened
- 2 large eggs
- 200 g dark chocolate, chopped or chips
Instructions
- Combine the flour, sugar, milk powder, salt, baking powder, and yeast in a large mixing bowl until ready to serve.
- Add the warm milk and eggs, mixing until a shaggy dough forms.
- Knead in the softened butter until the dough is smooth and elastic, approximately 10 minutes by hand or 7 minutes in a stand mixer.
- Cover the dough and let it rise in a warm place for 60-90 minutes, or until doubled in size.
- Punch down the dough and roll it out into a rectangle on a floured surface until ready to serve.
- Sprinkle the chopped chocolate evenly over the dough, then roll it up tightly into a log until ready to serve.
- Place the log into a greased loaf pan and let it proof for another 30-45 minutes.
- Bake in a preheated oven at 180°C (350°F) for 30-35 minutes, or until the top is golden brown and the loaf sounds hollow when tapped.
