Chocolate Brioche by Nourhan Hegazy

Enriched golden brioche dough marbled with decadent chocolate, featuring a soft, tender crumb and buttery finish.

Ingredients

  • 1 kg all-purpose flour
  • 200 g sugar
  • 3 tbsp milk powder
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tbsp active dry yeast
  • 240 ml warm milk
  • 150 g unsalted butter, softened
  • 2 large eggs
  • 200 g dark chocolate, chopped or chips

Instructions

  1. Combine the flour, sugar, milk powder, salt, baking powder, and yeast in a large mixing bowl until ready to serve.
  2. Add the warm milk and eggs, mixing until a shaggy dough forms.
  3. Knead in the softened butter until the dough is smooth and elastic, approximately 10 minutes by hand or 7 minutes in a stand mixer.
  4. Cover the dough and let it rise in a warm place for 60-90 minutes, or until doubled in size.
  5. Punch down the dough and roll it out into a rectangle on a floured surface until ready to serve.
  6. Sprinkle the chopped chocolate evenly over the dough, then roll it up tightly into a log until ready to serve.
  7. Place the log into a greased loaf pan and let it proof for another 30-45 minutes.
  8. Bake in a preheated oven at 180°C (350°F) for 30-35 minutes, or until the top is golden brown and the loaf sounds hollow when tapped.
