Taiwanese Frozen Sweet Potato by Notwasabi

Slow-roasted whole sweet potatoes with a creamy, custard-like texture achieved through deep-freezing and partial thawing.

Ingredients
- 4 medium sweet potatoes, whole and unpeeled
Instructions
- Preheat your oven to 425°F (220°C).
- Place the whole, unpeeled sweet potatoes on a baking sheet lined with parchment paper until ready to serve.
- Bake for 45 to 60 minutes, or until the potatoes are completely soft when pierced with a fork.
- Remove from the oven and let them cool to room temperature at 375°F until golden and cooked through, about 25 min.
- Place the potatoes in a freezer-safe bag or container and freeze for at least 4 hours.
- Thaw at room temperature for 5 to 10 minutes before eating as a cold, frozen snack.
