Roasted Tomato Soup & Grilled Cheese by Notorious Foodie

Ingredients

  • 2 lbs tomatoes
  • 1 medium onion
  • 4 cloves garlic
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 4 cups vegetable broth
  • 0.5 cup heavy cream
  • 8 slices bread
  • 4 slices cheese
  • 2 tbsp butter

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Halve or quarter the tomatoes, quarter the onion, and peel the garlic cloves. Toss everything with olive oil, salt, and pepper on a baking sheet
  3. Roast for 30-40 minutes, or until tomatoes are softened and slightly charred.
  4. Transfer roasted vegetables to a blender or pot
  5. Add vegetable broth and blend until smooth. Return to the pot if needed.
  6. Stir in heavy cream and heat gently until warm, but do not boil.
  7. While soup simmers, butter one side of each bread slice
  8. Place cheese slices between unbuttered sides of bread
  9. Grill sandwiches in a skillet over medium heat for 3-5 minutes per side, until golden brown and cheese is melted.
  10. Serve soup hot with grilled cheese sandwiches
