Roasted Tomato Soup & Grilled Cheese by Notorious Foodie

Ingredients
- 2 lbs tomatoes
- 1 medium onion
- 4 cloves garlic
- 2 tbsp olive oil
- 1 tsp salt
- 0.5 tsp black pepper
- 4 cups vegetable broth
- 0.5 cup heavy cream
- 8 slices bread
- 4 slices cheese
- 2 tbsp butter
Instructions
- Preheat oven to 400°F (200°C).
- Halve or quarter the tomatoes, quarter the onion, and peel the garlic cloves. Toss everything with olive oil, salt, and pepper on a baking sheet
- Roast for 30-40 minutes, or until tomatoes are softened and slightly charred.
- Transfer roasted vegetables to a blender or pot
- Add vegetable broth and blend until smooth. Return to the pot if needed.
- Stir in heavy cream and heat gently until warm, but do not boil.
- While soup simmers, butter one side of each bread slice
- Place cheese slices between unbuttered sides of bread
- Grill sandwiches in a skillet over medium heat for 3-5 minutes per side, until golden brown and cheese is melted.
- Serve soup hot with grilled cheese sandwiches
