Eggy Tofu Scramble by Nisha Vora Vegan Recipes

Ingredients
- 400g (14 oz) firm tofu, drained and crumbled
- 2 tbsp nutritional yeast
- 1/2 tsp turmeric powder
- 1/2 tsp black salt (kala namak)
- 1/4 cup unsweetened plant milk
- 1 tbsp olive oil
- 1/4 tsp garlic powder
Instructions
- Heat olive oil in a non-stick skillet over medium heat.
- Add the crumbled tofu to the skillet and sauté for 3-4 minutes until slightly golden.
- Whisk together the plant milk, nutritional yeast, turmeric, garlic powder, and black salt in a small bowl
- Pour the mixture over the tofu, stirring constantly for 2-3 minutes until the liquid is absorbed and the texture is creamy.
- Remove from heat and serve immediately while hot
