Creamy White Wine and Garlic Chicken by Nickys Kitchen Sanctuary

Pan-seared chicken breasts simmered in a rich, creamy white wine sauce with garlic and mushrooms.

Ingredients

  • 4 chicken breasts, boneless and skinless
  • 2 tbsp olive oil
  • 250g (9 oz) cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 120ml (1/2 cup) dry white wine
  • 200ml (3/4 cup) heavy cream
  • 1 tsp dried thyme
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper

Instructions

  1. Season chicken breasts with salt and pepper, then heat olive oil in a large skillet over medium-high heat.
  2. Sear chicken for 5-6 minutes per side until golden brown and cooked through, then remove from the pan and set aside.
  3. Add sliced mushrooms to the same skillet and sauté for 4-5 minutes until browned.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Pour in the white wine and simmer for 2-3 minutes to reduce the liquid by half.
  6. Whisk in the heavy cream and dried thyme, then simmer for 2 minutes until the sauce slightly thickens.
  7. Return the chicken to the pan and coat with the sauce, heating for 1 minute before serving.
