Charcoal Grilled Steak by Nick Digiovanni

Tender steak seasoned with salt and pepper, seared over charcoal for a smoky, charred crust.

Ingredients

  • 2 thick-cut ribeye or sirloin steaks
  • 1 tsp kosher salt (adjust to taste)
  • 1 tsp cracked black pepper (adjust to taste)
  • 2 lengths of kitchen twine (for trussing)

Instructions

  1. Truss the steaks with kitchen twine to ensure they maintain their shape and cook evenly during the searing process
  2. Season both sides of the steaks generously with salt and pepper.
  3. Prepare a charcoal grill and wait until the coals are glowing red and covered in a light layer of white ash.
  4. Place the steaks directly over the hot coals and sear for 3-5 minutes per side, pressing down occasionally to ensure even contact for a deep crust.
  5. Remove the steaks from the grill once they reach your desired internal doneness and allow them to rest for 5-8 minutes before slicing.
