Charcoal Grilled Steak by Nick Digiovanni
Tender steak seasoned with salt and pepper, seared over charcoal for a smoky, charred crust.

Ingredients
- 2 thick-cut ribeye or sirloin steaks
- 1 tsp kosher salt (adjust to taste)
- 1 tsp cracked black pepper (adjust to taste)
- 2 lengths of kitchen twine (for trussing)
Instructions
- Truss the steaks with kitchen twine to ensure they maintain their shape and cook evenly during the searing process
- Season both sides of the steaks generously with salt and pepper.
- Prepare a charcoal grill and wait until the coals are glowing red and covered in a light layer of white ash.
- Place the steaks directly over the hot coals and sear for 3-5 minutes per side, pressing down occasionally to ensure even contact for a deep crust.
- Remove the steaks from the grill once they reach your desired internal doneness and allow them to rest for 5-8 minutes before slicing.
