Spicy Peanut Butter Ramen by Myriadrecipes Instagram
Creamy, slightly spicy one-pan ramen with chicken, udon, and a silky peanut curry broth.

Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp neutral oil
- 2 cloves garlic, minced
- 2 tbsp red curry paste
- 2 tbsp soy sauce
- 1/3 cup crunchy peanut butter
- 1 can (13.5 oz) coconut milk
- 2 cups chicken stock
- 6 to 8 oz udon noodles or ramen noodles
- 1 lime, cut into wedges
- 2 tbsp chopped coriander (cilantro)
- 1 tbsp chili oil
- 1/2 cup mangetout (snow peas), optional
Instructions
- Heat the oil in a large saucepan over medium-high heat, then sear the chicken breasts for 3 to 4 minutes per side until golden.
- Remove the chicken and set it aside while you build the broth.
- Stir the garlic, red curry paste, soy sauce, and peanut butter together in the pan for 30 seconds until fragrant.
- Pour in the coconut milk and chicken stock, then whisk for 1 to 2 minutes until the sauce looks silky and smooth.
- Return the chicken to the pan and simmer for 8 to 10 minutes, until cooked through and the juices run clear.
- Add the noodles and mangetout, if using, and cook for 3 to 5 minutes until the noodles are tender and chewy.
- Slice the chicken, then serve it over the noodles with coriander, lime wedges, and a drizzle of chili oil.
