Creamy, slightly spicy one-pan ramen with chicken, udon, and a silky peanut curry broth.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp neutral oil
  • 2 cloves garlic, minced
  • 2 tbsp red curry paste
  • 2 tbsp soy sauce
  • 1/3 cup crunchy peanut butter
  • 1 can (13.5 oz) coconut milk
  • 2 cups chicken stock
  • 6 to 8 oz udon noodles or ramen noodles
  • 1 lime, cut into wedges
  • 2 tbsp chopped coriander (cilantro)
  • 1 tbsp chili oil
  • 1/2 cup mangetout (snow peas), optional

Instructions

  1. Heat the oil in a large saucepan over medium-high heat, then sear the chicken breasts for 3 to 4 minutes per side until golden.
  2. Remove the chicken and set it aside while you build the broth.
  3. Stir the garlic, red curry paste, soy sauce, and peanut butter together in the pan for 30 seconds until fragrant.
  4. Pour in the coconut milk and chicken stock, then whisk for 1 to 2 minutes until the sauce looks silky and smooth.
  5. Return the chicken to the pan and simmer for 8 to 10 minutes, until cooked through and the juices run clear.
  6. Add the noodles and mangetout, if using, and cook for 3 to 5 minutes until the noodles are tender and chewy.
  7. Slice the chicken, then serve it over the noodles with coriander, lime wedges, and a drizzle of chili oil.
