Ingredients
- 2 focaccia slices
- 1/4 cup mayonnaise
- 2 tbsp buffalo sauce
- 1 tsp garlic powder
- 2 tbsp chopped chives
- 1/4 cup grated parmesan cheese
- 2 chicken breasts, cut into cutlets
- 1/2 cup all-purpose flour
- 1 egg, beaten
- 1 cup panko bread crumbs
- 1/4 cup hot honey
- 1/4 cup melted butter
- 1 cup chopped fresh dill
- 1 cup mixed greens (lettuce and rocket)
- 2 tbsp lemon juice
- 2 tbsp plain yogurt
- 1/4 cup sliced pickles
- 2 tbsp vegetable oil, for frying
Instructions
- Prepare the crispy chicken: coat chicken cutlets in flour, then beaten egg, then panko bread crumbs.
- Fry chicken cutlets in vegetable oil over medium-high heat for 3-4 minutes per side, until golden brown and cooked through.
- Make the buffalo chive butter: combine mayonnaise, buffalo sauce, garlic powder, chopped chives, and grated parmesan cheese in a small bowl.
- Prepare the dill salad: whisk together chopped dill, mixed greens, lemon juice, and plain yogurt in a bowl
- Prepare the hot honey drizzle: combine hot honey and melted butter in a small bowl.
- Slice focaccia in half horizontally.
- Spread the buffalo chive butter generously on the bottom half of the focaccia slices.
- Place the bottom focaccia halves in an oven at 350°F (175°C) for 5-7 minutes, until golden.
- Place the fried chicken cutlets on top of the warmed focaccia.
- Drizzle the hot honey mixture over the chicken.
- Add the dill salad and sliced pickles on top of the chicken.
- Place the top half of the focaccia on top to complete the sandwich.
- Wrap the sandwich tightly in baking paper, folding and tucking ends to seal.
- Chill.
