Tender chicken and rice served in crisp romaine leaves with a savory, umami-rich sauce and cucumber.

Ingredients
- 900g (2 lbs) chicken breast or thighs, diced
- 2 cup jasmine rice, cooked
- 2 heads romaine lettuce, leaves separated and washed
- 200g (7 oz) mushrooms, sliced
- 3 shallots, thinly sliced
- 5 cloves garlic, minced
- 1 cucumber, sliced
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp fish sauce
- 2 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 1/2 tsp salt and black pepper (to taste)
Instructions
- Heat olive oil in a large pan over medium heat and sauté minced garlic until fragrant, about 1-2 minutes.
- Add the diced chicken to the pan, then pour in a splash of water, soy sauce, oyster sauce, and fish sauce.
- Cover the pan and simmer on low heat for 20 minutes until the chicken is tender and cooked through.
- Remove the lid, add the sliced shallots and mushrooms, and increase the heat to high.
- Cook for 5-7 minutes, stirring frequently, until the sauce has reduced and thickened.
- Prepare the lemon sauce by whisking together the lemon juice, salt, and pepper in a small bowl.
- Assemble the wraps by placing a spoonful of rice and the chicken mixture into romaine lettuce leaves, topping with sliced cucumber and a drizzle of the lemon sauce.
