Tender chicken and rice served in crisp romaine leaves with a savory, umami-rich sauce and cucumber.

Ingredients

  • 900g (2 lbs) chicken breast or thighs, diced
  • 2 cup jasmine rice, cooked
  • 2 heads romaine lettuce, leaves separated and washed
  • 200g (7 oz) mushrooms, sliced
  • 3 shallots, thinly sliced
  • 5 cloves garlic, minced
  • 1 cucumber, sliced
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 2 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1/2 tsp salt and black pepper (to taste)

Instructions

  1. Heat olive oil in a large pan over medium heat and sauté minced garlic until fragrant, about 1-2 minutes.
  2. Add the diced chicken to the pan, then pour in a splash of water, soy sauce, oyster sauce, and fish sauce.
  3. Cover the pan and simmer on low heat for 20 minutes until the chicken is tender and cooked through.
  4. Remove the lid, add the sliced shallots and mushrooms, and increase the heat to high.
  5. Cook for 5-7 minutes, stirring frequently, until the sauce has reduced and thickened.
  6. Prepare the lemon sauce by whisking together the lemon juice, salt, and pepper in a small bowl.
  7. Assemble the wraps by placing a spoonful of rice and the chicken mixture into romaine lettuce leaves, topping with sliced cucumber and a drizzle of the lemon sauce.
