  • 2 large eggs
  • 1.5 tbsp ground cinnamon
  • 0.5 tbsp ground ginger
  • 0.5 tsp ground cloves
  • 1 tsp salt
  • 3 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 0.5 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Whisk together the brown sugar, vegetable oil, pumpkin puree, and eggs in a large bowl until smooth.
  3. Stir in the cinnamon, ginger, cloves, and salt until well combined.
  4. Fold in the flour, baking powder, and baking soda until just incorporated, then stir in chocolate chips if using.
  5. Drop rounded tablespoons of batter onto the prepared baking sheets, spacing them 2 inches apart.
  6. Bake for 10-12 minutes until the tops spring back when touched.
