Ingredients
- 4 large eggs, beaten
- 200g (7 oz) breakfast sausage, crumbled
- 1 cup cheddar cheese, shredded
- 2 large flour tortillas
- 1 tbsp butter
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Heat a skillet over medium-high heat and add the crumbled sausage, cooking for 5-7 minutes until browned and cooked through.
- Remove sausage from the pan and set aside, keeping the rendered fat in the skillet.
- Lower heat to medium and add butter to the skillet, then pour in the beaten eggs seasoned with salt and pepper.
- Scramble the eggs gently for 2-3 minutes until soft curds form but they remain moist.
- Warm the tortillas in a separate dry pan for 30 seconds per side until pliable.
- Assemble by layering the eggs, cooked sausage, and shredded cheese in the center of each tortilla.
- Fold in the sides of the tortilla and roll tightly to seal, then serve immediately.
