Pikao Cheesecake by Mykhailaeats

Velvety, no-mixer cheesecake infused with sweet Pikao condensed milk and topped with fresh tart cherries.

Ingredients

  • 250g cream cheese
  • 200g pikao (sweetened condensed milk with cocoa)
  • 3 large eggs
  • 1 tsp vanilla extract
  • 150g fresh or frozen cherries, pitted
  • 100g digestive biscuits, crushed (for base)
  • 50g unsalted butter, melted (for base)

Instructions

  1. Preheat oven to 170°C (340°F) and line a 20cm (8-inch) springform pan with parchment paper.
  2. Mix crushed biscuits with melted butter and press firmly into the bottom of the pan; bake for 8 minutes and set aside to cool.
  3. Whisk cream cheese and Pikao in a large bowl until smooth, about 3 minutes.
  4. Add eggs one at a time, whisking gently until just combined, then stir in the vanilla extract.
  5. Pour the mixture over the cooled biscuit base and scatter the cherries evenly on top until ready to serve.
  6. Bake for 40-45 minutes until the edges are set but the center still has a slight wobble.
  7. Cool completely to room temperature, then refrigerate for at least 4 hours before serving.
