Tender spiced chicken mince skewers with a charred exterior, served with fresh onions and chutney.

Ingredients

  • 500 g chicken mince
  • 175 g (3/4 cup) onions, finely chopped and squeezed dry
  • 1/2 cup green chili, ginger, and cilantro, finely chopped
  • 1/2 cup bread crumbs
  • 2 tbsp oil
  • 1 tsp black pepper
  • 1 tsp kashmiri red chili powder
  • 1 tsp coriander powder
  • 1 tsp garlic powder
  • 3/4 tsp garam masala
  • 1/2 tsp chat masala
  • 1/2 tsp onion powder
  • 1 tsp salt (adjust to taste)

Instructions

  1. Combine the chicken mince with all spices, aromatics, bread crumbs, and oil in a large bowl, mixing thoroughly until well incorporated.
  2. Cover the mixture and let it marinate in the refrigerator for 30 minutes to allow flavors to develop.
  3. Shape the mixture into long sausage shapes, either by hand or molded around flat steel skewers.
  4. Grill the kebabs over high heat for 5-6 minutes to sear the exterior, then reduce to low heat for 10-12 minutes, turning frequently until fully cooked and charred.
  5. Serve immediately, garnished with fresh sliced onions, lemon wedges, and green chutney.
