No Bake Butterscotch Pudding by Mygourmetstory

Butterscotch pudding layered with soaked cookies and topped with a light, sweetened whipped cream finish.

Ingredients
- 1 cup sugar
- 4 tbsp butter
- 1.5 cup heavy cream
- 2 tbsp powdered sugar
- 1 pack lightly sweet cookies
- 1/2 cup milk
Instructions
- Melt 1 cup sugar in a saucepan over medium heat until caramelized, then stir in 4 tbsp butter until smooth.
- Whisk in 1/2 cup heavy cream, simmer until thickened, then remove from heat and divide into two portions.
- Mix one portion of the sauce with 1/2 cup milk in a small bowl to create the soaking liquid
- Whip remaining 1 cup heavy cream with 2 tbsp powdered sugar until stiff peaks form, then fold in 2 tbsp of the remaining butterscotch sauce.
- Arrange a layer of cookies in a dish and pour the butterscotch milk over them to soak.
- Spread a layer of butterscotch whipped cream over the soaked cookies.
- Repeat layers twice more, finishing with a final layer of whipped cream.
- Garnish with remaining butterscotch sauce and refrigerate for at least 2 hours before serving.
