No Bake Butterscotch Pudding by Mygourmetstory

Butterscotch pudding layered with soaked cookies and topped with a light, sweetened whipped cream finish.

Ingredients

  • 1 cup sugar
  • 4 tbsp butter
  • 1.5 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 pack lightly sweet cookies
  • 1/2 cup milk

Instructions

  1. Melt 1 cup sugar in a saucepan over medium heat until caramelized, then stir in 4 tbsp butter until smooth.
  2. Whisk in 1/2 cup heavy cream, simmer until thickened, then remove from heat and divide into two portions.
  3. Mix one portion of the sauce with 1/2 cup milk in a small bowl to create the soaking liquid
  4. Whip remaining 1 cup heavy cream with 2 tbsp powdered sugar until stiff peaks form, then fold in 2 tbsp of the remaining butterscotch sauce.
  5. Arrange a layer of cookies in a dish and pour the butterscotch milk over them to soak.
  6. Spread a layer of butterscotch whipped cream over the soaked cookies.
  7. Repeat layers twice more, finishing with a final layer of whipped cream.
  8. Garnish with remaining butterscotch sauce and refrigerate for at least 2 hours before serving.
