Quick and delicious Thai-inspired noodle dish featuring frozen dumplings simmered in a creamy red curry coconut sauce.

Ingredients

  • 150g (5 oz) noodles of choice
  • 12-15 frozen dumplings
  • 2 tbsp thai red curry paste
  • 2 tbsp butter
  • 1 cup unsweetened coconut milk
  • 1 tbsp chopped garlic
  • 1/2 medium onion, chopped
  • 1 tbsp chili crisp oil
  • 1/2 tsp salt, to taste
  • 1/4 tsp black pepper, to taste
  • 1 cup water
  • 2 tbsp chopped fresh cilantro (for garnish)
  • 1 green chili, chopped (for garnish)
  • 2 tbsp crushed peanuts (for garnish)
  • 1/4 cup shaved cucumber (for garnish)

Instructions

  1. In a pan, combine 2 tbsp butter and 1 tbsp chili crisp oil over medium-low heat. Add 1 tbsp chopped garlic and 1/2 chopped onion; saute for 1 minute until the onions are translucent and slightly pink.
  2. Add a splash of water (about 1 tbsp) to deglaze, then stir in 2 tbsp Thai red curry paste, 1 cup unsweetened coconut milk, 1 cup water, 1/2 tsp salt, and 1/4 tsp black pepper. Bring to a gentle simmer.
  3. Carefully drop 12-15 frozen dumplings and 150g (5 oz) noodles into the simmering sauce. Cover the pan and cook on low heat for 10 minutes, or until the dumplings are cooked through and the noodles are tender.
  4. Give the mixture a gentle stir. Divide into serving bowls and garnish with chopped fresh cilantro, chopped green chili, crushed peanuts, and shaved cucumber before serving hot.
