30-Minute Bhuna Masala Chicken by Mygourmetstory
Tender boneless chicken simmered in a fragrant, spiced tomato and onion gravy with yogurt.

Ingredients
- 500g boneless chicken, cut into bite-sized pieces
- 1 cup onions, finely chopped
- 1 cup tomatoes, finely chopped
- 3 tbsp yogurt
- 1.5 tbsp ginger garlic paste
- 3 green chilies, chopped
- 1/2 tsp turmeric powder
- 1 tbsp coriander powder
- 1 tsp kashmiri red chili powder
- 1/2 tsp chili powder
- 1 tsp garam masala powder
- 1 tbsp kasuri methi (dried fenugreek leaves), crushed
- 1/4 tsp brown sugar
- 1 tsp salt (adjust to taste)
Instructions
- Heat a pan over medium-high heat with a splash of oil and sauté the onions until translucent and golden, about 5-7 minutes.
- Add the ginger garlic paste and chopped green chilies, cooking for 1 minute until fragrant.
- Stir in the chopped tomatoes, turmeric, coriander powder, chili powders, and salt; cook for 4-5 minutes until the tomatoes soften and oil begins to separate.
- Add the chicken pieces and sear for 3-4 minutes until the outside is opaque.
- Lower the heat to medium-low, stir in the yogurt, and cover the pan, simmering for 8-10 minutes until the chicken is cooked through.
- Finish by stirring in the garam masala, kasuri methi, and brown sugar; cook for 1 additional minute before serving over medium heat until softened, about 5 min.
