Ingredients

  • 500g boneless chicken, cut into bite-sized pieces
  • 1 cup onions, finely chopped
  • 1 cup tomatoes, finely chopped
  • 3 tbsp yogurt
  • 1.5 tbsp ginger garlic paste
  • 3 green chilies, chopped
  • 1/2 tsp turmeric powder
  • 1 tbsp coriander powder
  • 1 tsp kashmiri red chili powder
  • 1/2 tsp chili powder
  • 1 tsp garam masala powder
  • 1 tbsp kasuri methi (dried fenugreek leaves), crushed
  • 1/4 tsp brown sugar
  • 1 tsp salt (adjust to taste)

Instructions

  1. Heat a pan over medium-high heat with a splash of oil and sauté the onions until translucent and golden, about 5-7 minutes.
  2. Add the ginger garlic paste and chopped green chilies, cooking for 1 minute until fragrant.
  3. Stir in the chopped tomatoes, turmeric, coriander powder, chili powders, and salt; cook for 4-5 minutes until the tomatoes soften and oil begins to separate.
  4. Add the chicken pieces and sear for 3-4 minutes until the outside is opaque.
  5. Lower the heat to medium-low, stir in the yogurt, and cover the pan, simmering for 8-10 minutes until the chicken is cooked through.
  6. Finish by stirring in the garam masala, kasuri methi, and brown sugar; cook for 1 additional minute before serving over medium heat until softened, about 5 min.
