Ingredients

  • 2 tbsp soft butter
  • 1/3 cup powdered sugar (for cake)
  • 1 tsp vanilla essence (for cake)
  • 1/2 cup all purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/3 cup milk
  • 2 tbsp fresh yogurt
  • 1 cup whipping cream (for frosting)
  • 2 tbsp powdered sugar (for frosting)
  • 1/2 tsp vanilla essence (for frosting)
  • 1 cup fresh berries of choice, for garnish
  • 1/2 cup evaporated milk
  • 1/2 cup coconut milk
  • 1/4 cup whipping cream (for milk mix)
  • 2 tbsp powdered sugar (for milk mix)

Instructions

  1. In a mixing bowl, combine the soft butter, 1/3 cup powdered sugar, and 1 tsp vanilla essence. Mix until well combined and creamy, about 1 minute.
  2. Sift the all-purpose flour, baking powder, and baking soda directly into the same bowl. Gradually add 1/3 cup milk, mixing until just combined and smooth.
  3. Fold in the fresh yogurt until a thick, smooth batter forms, being careful not to overmix.
  4. Line a microwave-proof baking dish with parchment paper or grease well. Pour the batter into the dish and gently tap it on the counter to remove any air bubbles.
  5. Microwave for 3-3.5 minutes on high power, until a toothpick inserted into the center comes out clean. Let the cake rest in the dish for 5 minutes, then transfer to a wire rack to cool completely.
  6. While the cake cools, prepare the frosting: In a clean bowl, whip 1 cup whipping cream with 2 tbsp powdered sugar and 1/2 tsp vanilla essence until stiff peaks form, about 3-4 minutes.
  7. Prepare the three-milk mixture: In a separate bowl, whisk together evaporated milk, coconut milk, 1/4 cup whipping cream, and 2 tbsp powdered sugar until well combined, about 1 minute.
  8. Once the cake is completely cooled, use a fork or skewer to poke holes evenly across the top. Slowly pour the three-milk mixture over the cake, allowing it to soak in for at least 10 minutes.
  9. Spread the whipped cream evenly over the soaked cake and garnish with fresh berries before serving.
