Pear and Almond Clafoutis by Mydigitalkitchen
Tender poached pears baked in a light, custardy almond batter with a delicate golden finish.

Ingredients
- 3 large green anjou pears, peeled, cored, and sliced
- 1/2 cup almond flour
- 1/2 cup all-purpose flour
- 1/2 cup granulated sugar
- 3 large eggs
- 1 cup whole milk
- 1/2 cup heavy cream
- 1 tsp vanilla extract
- 1/4 tsp almond extract
- 1 tbsp unsalted butter (for greasing pan)
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9-inch baking dish or cast-iron skillet with butter.
- Arrange the sliced pears in an even layer at the bottom of the prepared baking dish until ready to serve.
- Whisk together the eggs and sugar in a large bowl until pale and slightly thickened, about 2 minutes.
- Stir in the almond flour, all-purpose flour, milk, heavy cream, vanilla, and almond extract until the batter is smooth.
- Pour the batter carefully over the pears, ensuring they are evenly covered until ready to serve.
- Bake for 35-40 minutes until the clafoutis is puffed, golden brown on top, and set in the center.
- Remove from oven and let rest for 10 minutes before serving warm.
