Tender poached pears baked in a light, custardy almond batter with a delicate golden finish.

Ingredients

  • 3 large green anjou pears, peeled, cored, and sliced
  • 1/2 cup almond flour
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1 tbsp unsalted butter (for greasing pan)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9-inch baking dish or cast-iron skillet with butter.
  2. Arrange the sliced pears in an even layer at the bottom of the prepared baking dish until ready to serve.
  3. Whisk together the eggs and sugar in a large bowl until pale and slightly thickened, about 2 minutes.
  4. Stir in the almond flour, all-purpose flour, milk, heavy cream, vanilla, and almond extract until the batter is smooth.
  5. Pour the batter carefully over the pears, ensuring they are evenly covered until ready to serve.
  6. Bake for 35-40 minutes until the clafoutis is puffed, golden brown on top, and set in the center.
  7. Remove from oven and let rest for 10 minutes before serving warm.
