The BEST Tomato Soup by Mxriyum

Ingredients

  • 6 tomatoes
  • 1 red bell pepper
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1/4 cup fresh basil, chopped
  • 4 tbsp butter
  • 2 tbsp olive oil
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 tsp salt (to taste)
  • 1/2 tsp black pepper (to taste)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Wash and chop 6 tomatoes and 1 red bell pepper. Place on a baking sheet and roast for 20 minutes.
  3. Broil the roasted vegetables until slightly charred, then remove from oven.
  4. Heat 4 tbsp butter and 2 tbsp olive oil in a large pot over medium heat.
  5. Add chopped onion and sauté for 2 minutes until softened.
  6. Add minced garlic and sauté for another 2-3 minutes until fragrant.
  7. Stir in tomato paste and chopped fresh basil, sautéing for 2-3 minutes.
  8. Add the roasted tomatoes and bell pepper to the pot
  9. Pour in 4 cups of chicken broth and season with salt and pepper to taste
  10. Stir everything to combine and bring to a simmer
  11. Stir in 2 cups of heavy cream until well combined.
  12. Use an immersion blender (or transfer to a regular blender) to blend the soup until smooth.
