Ingredients
- 6 tomatoes
- 1 red bell pepper
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 1/4 cup fresh basil, chopped
- 4 tbsp butter
- 2 tbsp olive oil
- 4 cups chicken broth
- 2 cups heavy cream
- 1 tsp salt (to taste)
- 1/2 tsp black pepper (to taste)
Instructions
- Preheat oven to 425°F (220°C).
- Wash and chop 6 tomatoes and 1 red bell pepper. Place on a baking sheet and roast for 20 minutes.
- Broil the roasted vegetables until slightly charred, then remove from oven.
- Heat 4 tbsp butter and 2 tbsp olive oil in a large pot over medium heat.
- Add chopped onion and sauté for 2 minutes until softened.
- Add minced garlic and sauté for another 2-3 minutes until fragrant.
- Stir in tomato paste and chopped fresh basil, sautéing for 2-3 minutes.
- Add the roasted tomatoes and bell pepper to the pot
- Pour in 4 cups of chicken broth and season with salt and pepper to taste
- Stir everything to combine and bring to a simmer
- Stir in 2 cups of heavy cream until well combined.
- Use an immersion blender (or transfer to a regular blender) to blend the soup until smooth.
