Nashville Hot Chicken Burger by Mushkitchen

Crispy fried chicken breast coated in a fiery spiced oil on a toasted brioche bun.

Ingredients
- 4 boneless, skinless chicken breasts
- 2 cup all-purpose flour
- 1 cup buttermilk
- 2 large eggs
- 4 brioche burger buns
- 1/2 cup mayonnaise
- 1 cup dill pickle slices
- 4 tbsp cayenne pepper
- 2 tbsp brown sugar
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 cup hot frying oil (reserved from chicken fry)
Instructions
- Whisk buttermilk and eggs in a shallow bowl; combine flour, salt, and pepper in a separate bowl over medium heat until heated through, about 5 min.
- Dip chicken into the flour, then buttermilk mixture, then back into flour, pressing to coat well until ready to serve.
- Fry chicken in oil at 175°C (350°F) for 6-8 minutes per side until golden brown and cooked through.
- Whisk cayenne, brown sugar, garlic powder, and paprika into 1/2 cup of hot frying oil to create the spicy coating over medium heat until heated through, about 5 min.
- Brush the spicy oil generously over the fried chicken breasts until ready to serve.
- Toast brioche buns, spread with mayonnaise, and assemble with chicken and pickle slices until ready to serve.
