Nashville Hot Chicken Burger by Mushkitchen

Crispy fried chicken breast coated in a fiery spiced oil on a toasted brioche bun.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cup all-purpose flour
  • 1 cup buttermilk
  • 2 large eggs
  • 4 brioche burger buns
  • 1/2 cup mayonnaise
  • 1 cup dill pickle slices
  • 4 tbsp cayenne pepper
  • 2 tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 cup hot frying oil (reserved from chicken fry)

Instructions

  1. Whisk buttermilk and eggs in a shallow bowl; combine flour, salt, and pepper in a separate bowl over medium heat until heated through, about 5 min.
  2. Dip chicken into the flour, then buttermilk mixture, then back into flour, pressing to coat well until ready to serve.
  3. Fry chicken in oil at 175°C (350°F) for 6-8 minutes per side until golden brown and cooked through.
  4. Whisk cayenne, brown sugar, garlic powder, and paprika into 1/2 cup of hot frying oil to create the spicy coating over medium heat until heated through, about 5 min.
  5. Brush the spicy oil generously over the fried chicken breasts until ready to serve.
  6. Toast brioche buns, spread with mayonnaise, and assemble with chicken and pickle slices until ready to serve.
