Golden-fried chicken meatballs infused with fresh diced jalapenos for a savory, spicy, and satisfying crunch.

Ingredients

  • 500g (1.1 lb) ground chicken
  • 3 medium fresh jalapenos, seeded and finely diced
  • 1/2 cup panko breadcrumbs
  • 1/4 cup parmesan cheese, grated
  • 1 large egg, lightly beaten
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup all-purpose flour (for coating)
  • 2 cup vegetable oil (for frying)

Instructions

  1. Combine ground chicken, diced jalapenos, panko, parmesan, egg, garlic powder, salt, and pepper in a large bowl, mixing until just incorporated.
  2. Form the mixture into golf-ball-sized spheres using damp hands to prevent sticking until ready to serve.
  3. Dredge each chicken ball lightly in flour, shaking off the excess until ready to serve.
  4. Heat vegetable oil in a deep skillet or pot to 175°C (350°F).
  5. Fry the chicken balls in batches for 6-8 minutes, turning occasionally until deep golden brown and cooked through.
  6. Drain on a wire rack or paper towel-lined plate for 2 minutes before serving.
