Golden-fried chicken meatballs infused with fresh diced jalapenos for a savory, spicy, and satisfying crunch.

Ingredients
- 500g (1.1 lb) ground chicken
- 3 medium fresh jalapenos, seeded and finely diced
- 1/2 cup panko breadcrumbs
- 1/4 cup parmesan cheese, grated
- 1 large egg, lightly beaten
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup all-purpose flour (for coating)
- 2 cup vegetable oil (for frying)
Instructions
- Combine ground chicken, diced jalapenos, panko, parmesan, egg, garlic powder, salt, and pepper in a large bowl, mixing until just incorporated.
- Form the mixture into golf-ball-sized spheres using damp hands to prevent sticking until ready to serve.
- Dredge each chicken ball lightly in flour, shaking off the excess until ready to serve.
- Heat vegetable oil in a deep skillet or pot to 175°C (350°F).
- Fry the chicken balls in batches for 6-8 minutes, turning occasionally until deep golden brown and cooked through.
- Drain on a wire rack or paper towel-lined plate for 2 minutes before serving.
