Baked potatoes stuffed with grilled beef ribs and finished with a rich layer of melted cheese.

Ingredients
- 2 large baking potatoes
- 1 lb beef ribs
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp butter
- 1/2 cup bechamel sauce
- 1 cup shredded cheese
Instructions
- Preheat oven to 400°F (200°C). Rub potatoes with oil and salt, wrap in foil, and bake for 60 minutes until tender.
- Season the beef ribs with salt and pepper. Grill over high heat, turning frequently for about 5-8 minutes until browned and cooked through.
- Remove potatoes from the oven, slice open, and stir in butter and bechamel sauce.
- Chop the grilled ribs into bite-sized pieces.
- Top the prepared potatoes with the chopped ribs and a generous amount of shredded cheese.
- Wrap in foil or place in a heat-safe dish and return to the heat for 15 minutes to melt the cheese, then add the meat and heat for a final 5 minutes.
