Baked potatoes stuffed with grilled beef ribs and finished with a rich layer of melted cheese.

Ingredients

  • 2 large baking potatoes
  • 1 lb beef ribs
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp butter
  • 1/2 cup bechamel sauce
  • 1 cup shredded cheese

Instructions

  1. Preheat oven to 400°F (200°C). Rub potatoes with oil and salt, wrap in foil, and bake for 60 minutes until tender.
  2. Season the beef ribs with salt and pepper. Grill over high heat, turning frequently for about 5-8 minutes until browned and cooked through.
  3. Remove potatoes from the oven, slice open, and stir in butter and bechamel sauce.
  4. Chop the grilled ribs into bite-sized pieces.
  5. Top the prepared potatoes with the chopped ribs and a generous amount of shredded cheese.
  6. Wrap in foil or place in a heat-safe dish and return to the heat for 15 minutes to melt the cheese, then add the meat and heat for a final 5 minutes.
