Grilled Short Ribs with Piquin Lime Sauce by Munchieslabs

Thinly sliced short ribs grilled over low heat and served with a zesty, spicy lime sauce.

Ingredients
- 1 kg (2.2 lbs) thinly sliced bone-in short ribs
- 1 tbsp salt (adjust to taste)
- 1 tsp black pepper
- 2 tbsp dried chili piquin
- 3 cloves garlic, tatemado (charred)
- 1/2 tsp salt (for the sauce)
- 120 ml (1/2 cup) freshly squeezed lime juice
- 1 tbsp olive oil
Instructions
- Season the short ribs generously with salt and pepper on both sides.
- Prepare a grill with low heat coals and grill the ribs for 5-7 minutes per side until they achieve a deep, golden brown crust.
- Prepare the sauce by crushing the charred garlic, chile piquin, and salt together in a molcajete or mortar until a coarse paste forms.
- Stir the lime juice and olive oil into the paste in the molcajete until well combined.
- Serve the grilled ribs hot, drizzled with the spicy lime sauce.
