Grilled Short Ribs with Piquin Lime Sauce by Munchieslabs

Thinly sliced short ribs grilled over low heat and served with a zesty, spicy lime sauce.

Ingredients

  • 1 kg (2.2 lbs) thinly sliced bone-in short ribs
  • 1 tbsp salt (adjust to taste)
  • 1 tsp black pepper
  • 2 tbsp dried chili piquin
  • 3 cloves garlic, tatemado (charred)
  • 1/2 tsp salt (for the sauce)
  • 120 ml (1/2 cup) freshly squeezed lime juice
  • 1 tbsp olive oil

Instructions

  1. Season the short ribs generously with salt and pepper on both sides.
  2. Prepare a grill with low heat coals and grill the ribs for 5-7 minutes per side until they achieve a deep, golden brown crust.
  3. Prepare the sauce by crushing the charred garlic, chile piquin, and salt together in a molcajete or mortar until a coarse paste forms.
  4. Stir the lime juice and olive oil into the paste in the molcajete until well combined.
  5. Serve the grilled ribs hot, drizzled with the spicy lime sauce.
