Serves: 4Prep: 15 minCook: 10 min

Ingredients

  • 680g (1.5 lbs) skirt steak
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 8 corn or flour tortillas
  • 1/2 cup fresh cilantro, chopped (for garnish)
  • 1 white onion, finely diced (for garnish)
  • 2 limes, cut into wedges (for serving)

Instructions

  1. Pat the skirt steak dry with paper towels and rub evenly with olive oil, chili powder, cumin, garlic powder, and salt.
  2. Preheat a cast-iron skillet or grill to high heat.
  3. Sear the steak for 3-4 minutes per side until a deep brown crust forms and the internal temperature reaches 130°F (54°C) for medium-rare.
  4. Remove steak from heat and let it rest on a cutting board for 5-10 minutes to lock in juices.
  5. Slice the steak against the grain into thin strips.
  6. Warm the tortillas in a dry skillet over medium heat for 30 seconds per side.
  7. Assemble the tacos by layering steak slices onto the warm tortillas and topping with onion, cilantro, and a squeeze of fresh lime.
