Stuffed Bacon Egg and Cheese Bagels by Moribyan

Crispy toasted bagels filled with savory bacon, fluffy scrambled eggs, and melted cheddar cheese.

Ingredients
- 4 large plain bagels
- 8 slices bacon, cooked until crispy and chopped
- 6 large eggs
- 1/4 cup whole milk
- 1.5 cup sharp cheddar cheese, shredded
- 2 tbsp unsalted butter, melted
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bagels and use a spoon to scoop out some of the inner bread, creating a bowl shape
- Whisk eggs, milk, salt, and pepper in a medium bowl until combined.
- Cook the egg mixture in a non-stick skillet over medium heat, stirring frequently for 3-4 minutes until soft curds form; remove from heat while still slightly wet.
- Fold the chopped crispy bacon and 1 cup of the shredded cheese into the scrambled eggs.
- Divide the egg mixture evenly into the hollowed-out bagel centers
- Top each bagel with the remaining 1/2 cup of cheese and replace the bagel tops
- Brush the outsides of the bagels with melted butter and place on a baking sheet
- Bake for 10-12 minutes until the bagels are golden brown and the cheese is melted through.
