One Pot Desi Macaroni by Moodie Fooodie
Tender macaroni tossed in a vibrant, spiced masala sauce inspired by traditional Indian home cooking.

Ingredients
- 400g (14 oz) macaroni pasta
- 1 tbsp salt (adjust to taste)
- 1 tsp chaat masala
- 1 tbsp maggie masala
- 1 tsp kitchen king masala
- 1 tsp meat masala (or pav bhaji masala)
- 2 tbsp vegetable oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 medium tomatoes, chopped
- 4 cup water (or vegetable broth)
Instructions
- Heat oil in a large pot over medium heat and sauté the onion and garlic for 3-4 minutes until golden.
- Add chopped tomatoes and cook for 5 minutes until soft and pulpy.
- Stir in all the spices (chaat, Maggie, Kitchen King, and meat masala) and salt, cooking for 1 minute until fragrant.
- Pour in 4 cups of water and bring to a rolling boil over high heat.
- Add the dry macaroni, reduce heat to medium-low, and cover until ready to serve.
- Simmer for 8-10 minutes, stirring occasionally, until the pasta is cooked through and the sauce has thickened to a coating consistency.
