One Pot Desi Macaroni by Moodie Fooodie

Tender macaroni tossed in a vibrant, spiced masala sauce inspired by traditional Indian home cooking.

Ingredients

  • 400g (14 oz) macaroni pasta
  • 1 tbsp salt (adjust to taste)
  • 1 tsp chaat masala
  • 1 tbsp maggie masala
  • 1 tsp kitchen king masala
  • 1 tsp meat masala (or pav bhaji masala)
  • 2 tbsp vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium tomatoes, chopped
  • 4 cup water (or vegetable broth)

Instructions

  1. Heat oil in a large pot over medium heat and sauté the onion and garlic for 3-4 minutes until golden.
  2. Add chopped tomatoes and cook for 5 minutes until soft and pulpy.
  3. Stir in all the spices (chaat, Maggie, Kitchen King, and meat masala) and salt, cooking for 1 minute until fragrant.
  4. Pour in 4 cups of water and bring to a rolling boil over high heat.
  5. Add the dry macaroni, reduce heat to medium-low, and cover until ready to serve.
  6. Simmer for 8-10 minutes, stirring occasionally, until the pasta is cooked through and the sauce has thickened to a coating consistency.
