Turkish Menemen by Monamonkitchen
Classic Turkish breakfast scramble of vine-ripened tomatoes and eggs, finished with a salty cheese melt.

Ingredients
- 4 large ripe tomatoes, peeled and crushed
- 3 large eggs
- 100g (3.5 oz) feta or white cheese, crumbled
- 2 tbsp olive oil
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
Instructions
- Heat the olive oil in a wide skillet over medium heat.
- Add the crushed tomatoes and cook for 8-10 minutes until the liquid reduces and the tomatoes thicken into a sauce.
- Season the tomato base with salt and black pepper until ready to serve.
- Crack the eggs directly into the skillet and gently stir them into the tomatoes until just set, about 2-3 minutes.
- Sprinkle the crumbled cheese over the top, cover for 1 minute to melt, then serve immediately.
