Classic Turkish breakfast scramble of vine-ripened tomatoes and eggs, finished with a salty cheese melt.

Ingredients

  • 4 large ripe tomatoes, peeled and crushed
  • 3 large eggs
  • 100g (3.5 oz) feta or white cheese, crumbled
  • 2 tbsp olive oil
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper

Instructions

  1. Heat the olive oil in a wide skillet over medium heat.
  2. Add the crushed tomatoes and cook for 8-10 minutes until the liquid reduces and the tomatoes thicken into a sauce.
  3. Season the tomato base with salt and black pepper until ready to serve.
  4. Crack the eggs directly into the skillet and gently stir them into the tomatoes until just set, about 2-3 minutes.
  5. Sprinkle the crumbled cheese over the top, cover for 1 minute to melt, then serve immediately.
