Crispy Air Fryer Pork Belly by Mengseats

Crispy pork belly with a seasoned marinade, salt-dried skin, and a hot air-fryer finish.

Ingredients

  • 2 lb pork belly, skin on
  • 1 tbsp kosher salt, plus 1/4 cup for the skin
  • 1 tbsp vinegar
  • 1 tbsp neutral oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp soy sauce
  • 1 tsp five-spice powder
  • 1 tsp brown sugar
  • 1/2 tsp black pepper
  • 1 tbsp water

Instructions

  1. Pat the pork belly dry, then score the meat side in a crosshatch pattern without cutting through the skin.
  2. Mix the garlic, ginger, soy sauce, five-spice, brown sugar, black pepper, and water into a paste, then rub it all over the meat side and into the crevices.
  3. Brush the skin lightly with vinegar, then pack on a thick layer of kosher salt to help dry the surface.
  4. Air fry at 250°F for 30 minutes, until the pork is mostly cooked and the skin looks dry.
  5. Remove the salt crust, brush the skin with oil, then air fry at 400°F for 10 to 15 minutes, until the skin is deeply blistered and crisp.
  6. Rest for 10 minutes, then slice and serve.
