Hearty crock pot lasagna-inspired soup with sausage, tomatoes, cream cheese, spinach, and ditalini.

Ingredients
- 1 lb cooked Italian sausage
- 1/2 white onion, chopped
- 1 (28-oz) can crushed tomatoes or diced tomatoes
- 1 (24-oz) jar marinara sauce
- 4 cups low-sodium chicken broth
- 1 block (8 oz) cream cheese
- 2 cups fresh spinach, chopped
- 1 cup dry ditalini pasta
- 1 tsp salt, optional
- 1/2 tsp black pepper, optional
- 1 tsp Italian seasoning, optional
Instructions
- Add the cooked Italian sausage, chopped onion, crushed tomatoes, marinara sauce, and chicken broth to a crock pot.
- Stir to combine, then cover and cook on low for 6 hours or on high for 2 to 3 hours.
- About 20 minutes before serving, add the cream cheese, chopped spinach, and dry ditalini pasta.
- Stir well, cover again, and cook for 20 minutes more, until the pasta is tender and the cream cheese is melted.
- Stir the soup until creamy and smooth, then serve hot.
