Hearty crock pot lasagna-inspired soup with sausage, tomatoes, cream cheese, spinach, and ditalini.

Ingredients

  • 1 lb cooked Italian sausage
  • 1/2 white onion, chopped
  • 1 (28-oz) can crushed tomatoes or diced tomatoes
  • 1 (24-oz) jar marinara sauce
  • 4 cups low-sodium chicken broth
  • 1 block (8 oz) cream cheese
  • 2 cups fresh spinach, chopped
  • 1 cup dry ditalini pasta
  • 1 tsp salt, optional
  • 1/2 tsp black pepper, optional
  • 1 tsp Italian seasoning, optional

Instructions

  1. Add the cooked Italian sausage, chopped onion, crushed tomatoes, marinara sauce, and chicken broth to a crock pot.
  2. Stir to combine, then cover and cook on low for 6 hours or on high for 2 to 3 hours.
  3. About 20 minutes before serving, add the cream cheese, chopped spinach, and dry ditalini pasta.
  4. Stir well, cover again, and cook for 20 minutes more, until the pasta is tender and the cream cheese is melted.
  5. Stir the soup until creamy and smooth, then serve hot.
