Vegan Creamy Marinara Tortellini Bake made with plant-based mince, vegan cheese-filled tortellini and vegan mozzarella shreds.

Ingredients

  • Ground beef or ground turkey
  • Tortellini
  • Mozzarella cheese, shredded
  • 1 jar Marinara sauce
  • 1 block Cream cheese
  • Salt
  • Pepper
  • Italian seasoning
  • Crushed red chili flakes

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef or ground turkey and cook, breaking it apart with a spoon, until browned and cooked through.
  2. While the meat cooks, bring a large pot of water to a rolling boil. Add the tortellini and cook according to the package directions, typically 2-4 minutes for fresh tortellini, until al dente.
  3. Season the cooked meat with salt, pepper, Italian seasoning, and a little bit of crushed red chili flakes, stirring to combine.
  4. Drain any excess fat from the meat. Add the jar of marinara sauce and the block of cream cheese to the skillet with the seasoned meat. Stir constantly until the cream cheese is fully melted and well combined with the sauce, creating a creamy consistency.
  5. Drain the cooked tortellini and add it directly to the skillet with the meat and sauce mixture. Gently stir to evenly coat the tortellini.
  6. Top the tortellini and sauce mixture with the shredded mozzarella cheese. Bake in a preheated oven at 350°F (175°C) for 10 minutes, or until the cheese is melted and bubbly.
