Cheesy Microwave Scrambled Eggs by Mealsandmunchies
Creamy scrambled eggs cooked quickly in the microwave, made extra rich with mayonnaise and topped with melted cheese.

Ingredients
- 2 Large eggs
- 1 tbsp Mayonnaise
- to taste Shredded cheese
- to taste Salt
- to taste Black pepper
Instructions
- Crack the eggs into a microwave-safe bowl or mug. Add the mayonnaise, salt, and pepper.
- Whisk the eggs, mayonnaise, salt, and pepper together until well combined and slightly frothy.
- Microwave on high power for 60 seconds. Then, carefully remove and whisk again to break up cooked portions.
- Return to the microwave and cook for another 30-60 seconds, or until the eggs are mostly set but still slightly wet.
- Stir in the shredded cheese until melted and the eggs are fully cooked through and creamy.
- Let them rest for 30 seconds before serving. The residual heat will finish cooking them perfectly.
