Italian Ciabatta Sandwich with ciabatta roll olive oil and pesto finished with fresh herbs and citrus.

Ingredients

  • 1 ciabatta roll
  • 2 tbsp olive oil
  • 2 tbsp pesto
  • 1/2 tomato, sliced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 oz prosciutto
  • 2 oz salami
  • 4 oz mozzarella, torn
  • 1 cup rocket
  • 1 tbsp balsamic glaze
  • 5-6 fresh basil leaves

Instructions

  1. Slice the ciabatta roll in half horizontally.
  2. Drizzle olive oil on the bottom half and spread with pesto.
  3. Arrange tomato slices on the bottom half and season with salt and pepper.
  4. Tear and layer the mozzarella over the tomatoes.
  5. Layer on the prosciutto and salami.
  6. Add a generous amount of rocket.
  7. Drizzle with balsamic glaze.
  8. Finish with fresh basil leaves.
  9. Close the sandwich and cut in half to serve.
