A whole snapper baked in foil on the grill with lemon, garlic and fresh herbs.

Ingredients
- 1 whole snapper (about 600g), scaled and gutted
- 1 lemon, thinly sliced
- 1 small bunch flat-leaf parsley
- 1 small bunch dill
- 3 cloves garlic, sliced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lemon (extra, for serving)
Instructions
- Slash the snapper a few times on each side and season inside and out with salt and pepper.
- Stuff the cavity with lemon slices, parsley, dill and sliced garlic, then drizzle with olive oil.
- Wrap the whole fish loosely in a double layer of foil, sealing the edges into a parcel.
- Set the parcel on the grill grate over medium coals and cook about 18 to 20 minutes until the flesh flakes.
- Open the parcel, squeeze over extra lemon and serve straight from the foil.
