Whole Snapper in Foil, the Lazy Way to Look Fancy by Maxy69838

A whole snapper baked in foil on the grill with lemon, garlic and fresh herbs.

Ingredients

  • 1 whole snapper (about 600g), scaled and gutted
  • 1 lemon, thinly sliced
  • 1 small bunch flat-leaf parsley
  • 1 small bunch dill
  • 3 cloves garlic, sliced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon (extra, for serving)

Instructions

  1. Slash the snapper a few times on each side and season inside and out with salt and pepper.
  2. Stuff the cavity with lemon slices, parsley, dill and sliced garlic, then drizzle with olive oil.
  3. Wrap the whole fish loosely in a double layer of foil, sealing the edges into a parcel.
  4. Set the parcel on the grill grate over medium coals and cook about 18 to 20 minutes until the flesh flakes.
  5. Open the parcel, squeeze over extra lemon and serve straight from the foil.
